Ingredients:  

Main Ingredients

  • 2 medium Zucchini sliced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 can Diced Tomatoes (14.5 oz)
  • 2 cups Vegetable Broth
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • to taste Salt and Pepper

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Add the chopped onion and cook until translucent, about 5 minutes.
  • 3. Add the minced garlic and cook for another minute.
  • 4. Add the sliced zucchini and cook for about 5 minutes, until it starts to soften.
  • 5. Pour in the diced tomatoes and vegetable broth. Stir in the oregano and basil.
  • 6. Bring the stew to a boil, then reduce the heat and let it simmer for 20 minutes.
  • 7. Season with salt and pepper to taste before serving.

Notes:

This stew is great served with crusty bread.
