Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the chopped onion and cook until translucent, about 5 minutes.
3. Add the minced garlic and cook for another minute.
4. Add the sliced zucchini and cook for about 5 minutes, until it starts to soften.
5. Pour in the diced tomatoes and vegetable broth. Stir in the oregano and basil.
6. Bring the stew to a boil, then reduce the heat and let it simmer for 20 minutes.
7. Season with salt and pepper to taste before serving.
Notes:
This stew is great served with crusty bread.
