Squirrel, cleaned and cut into pieces

Chicken broth

Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the squirrel pieces and brown them on all sides.
3. Remove the squirrel and set aside.
4. In the same pot, add the chopped onion and garlic. Cook until softened.
5. Return the squirrel to the pot and add the chicken broth.
6. Add the carrots, potatoes, thyme, salt, and pepper.
7. Bring to a boil, then reduce heat and simmer for 2 hours, or until the meat is tender.
8. Serve hot and enjoy!

Make sure to clean the squirrel thoroughly before cooking.
