Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Brown the beef tips on all sides, then remove and set aside.
3. In the same pot, add onions and garlic, cook until softened.
4. Stir in tomato paste, then add beef broth, carrots, potatoes, thyme, salt, and pepper.
5. Return beef to the pot, bring to a boil, then reduce heat and simmer for 2 hours.
6. Serve hot and enjoy!
Notes:
Feel free to add other vegetables like peas or celery.
