Ingredients:  

Main Ingredients

  • 1 lb Beef tips
  • 1 cup Carrots, chopped
  • 1 cup Potatoes, diced
  • 1 cup Onions, chopped
  • 2 cloves Garlic, minced
  • 4 cups Beef broth
  • 2 tbsp Tomato paste
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tsp Thyme

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Brown the beef tips on all sides, then remove and set aside.
  • 3. In the same pot, add onions and garlic, cook until softened.
  • 4. Stir in tomato paste, then add beef broth, carrots, potatoes, thyme, salt, and pepper.
  • 5. Return beef to the pot, bring to a boil, then reduce heat and simmer for 2 hours.
  • 6. Serve hot and enjoy!

Notes:

Feel free to add other vegetables like peas or celery.
