Instructions:
Heat oil in a large pot over medium heat.
Add chopped onions, garlic, and ginger. Sauté until onions are golden brown.
Add mutton pieces and cook until browned on all sides.
Add turmeric, coriander, cumin, and garam masala. Stir well.
Pour in water and bring to a boil. Reduce heat, cover, and simmer for 60 minutes.
Add potatoes and carrots. Cook for another 30 minutes or until vegetables are tender.
Season with salt to taste. Serve hot.
Notes:
For a richer flavor, marinate the mutton in yogurt and spices for an hour before cooking.
