Ingredients:  

Main Ingredients

  • 2 lbs Beef Chuck cut into 1-inch cubes
  • 2 tbsp Olive Oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Beef Broth
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 2 tbsp Tomato Paste
  • 1 tsp Dried Thyme
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add beef and cook until browned on all sides. Remove beef and set aside.
  • In the same pot, add onions and garlic. Cook until onions are translucent.
  • Return beef to the pot. Add beef broth, carrots, potatoes, tomato paste, thyme, salt, and pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 2 hours or until beef is tender.

Notes:

Serve hot with crusty bread.
