Instructions:
Heat olive oil in a large pot over medium heat. Add beef and cook until browned on all sides. Remove beef and set aside.
In the same pot, add onions and garlic. Cook until onions are translucent.
Return beef to the pot. Add beef broth, carrots, potatoes, tomato paste, thyme, salt, and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for 2 hours or until beef is tender.
Notes:
Serve hot with crusty bread.
