Instructions:
1. Heat the vegetable oil in a large pot over medium heat. Add the beef and cook until browned on all sides.
2. Add the chopped onion and cook until softened.
3. Pour in the beef broth, soy sauce, mirin, and sugar. Stir to combine.
4. Add the carrots and potatoes. Bring to a boil, then reduce heat to low and simmer for about 2 hours, or until the beef is tender.
5. Season with salt and black pepper to taste. Serve hot.
