Ingredients:  

Main Ingredients

  • 1 kg beef chuck cut into cubes
  • 2 onions chopped
  • 3 carrots sliced
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • 1 cup red wine
  • 2 cups beef broth
  • 1 tsp paprika
  • 2 tsp salt or to taste
  • 1 tsp black pepper or to taste
  • 2 bay leaves
  • 1 cup peas frozen or fresh
  • 2 potatoes peeled and diced

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add the beef cubes and brown on all sides. Remove and set aside.
  • In the same pot, add onions, carrots, and garlic. Cook until softened.
  • Pour in the red wine and let it reduce by half.
  • Add the beef back to the pot along with beef broth, paprika, salt, pepper, and bay leaves.
  • Bring to a boil, then reduce heat and simmer for 1.5 hours.
  • Add the potatoes and cook for another 30 minutes.
  • Stir in the peas and cook for an additional 5 minutes.
  • Remove bay leaves and serve hot.

Notes:

For a richer flavor, let the stew sit overnight in the fridge and reheat before serving.
