red wine

beef broth

paprika

bay leaves

frozen or fresh

peeled and diced
Instructions:
Heat olive oil in a large pot over medium heat.
Add the beef cubes and brown on all sides. Remove and set aside.
In the same pot, add onions, carrots, and garlic. Cook until softened.
Pour in the red wine and let it reduce by half.
Add the beef back to the pot along with beef broth, paprika, salt, pepper, and bay leaves.
Bring to a boil, then reduce heat and simmer for 1.5 hours.
Add the potatoes and cook for another 30 minutes.
Stir in the peas and cook for an additional 5 minutes.
Remove bay leaves and serve hot.
Notes:
For a richer flavor, let the stew sit overnight in the fridge and reheat before serving.
