Ingredients:  

Main Ingredients

  • 6 large tomatoes chopped
  • 2 red bell peppers chopped
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 cup vegetable oil
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp curry powder
  • to taste salt
  • to taste black pepper
  • 1 whole chicken cut into pieces

Instructions: 

  • 1. Blend the tomatoes, red bell peppers, and onion until smooth.
  • 2. Heat the vegetable oil in a large pot over medium heat. Add the minced garlic and sauté until fragrant.
  • 3. Add the blended tomato mixture to the pot and cook for about 10 minutes, stirring occasionally.
  • 4. Stir in the tomato paste, thyme, curry powder, salt, and black pepper. Cook for another 5 minutes.
  • 5. Add the chicken pieces to the pot, ensuring they are well coated with the sauce. Cover and simmer for 45 minutes, or until the chicken is cooked through.
  • 6. Adjust seasoning if necessary and serve hot.

Notes:

This stew pairs well with rice or boiled yams.
