Ingredients:  

Main Ingredients

  • 2 lbs Beef chuck, cut into cubes
  • 2 large Sweet potatoes, peeled and cubed
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Beef broth
  • 2 tbsp Tomato paste
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tsp Dried thyme
  • 2 tsp Dried rosemary

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add beef cubes and brown on all sides. Remove and set aside.
  • 3. In the same pot, add onion and garlic. Cook until softened.
  • 4. Stir in tomato paste, then add beef broth, sweet potatoes, salt, pepper, thyme, and rosemary.
  • 5. Return beef to the pot. Bring to a boil, then reduce heat and simmer for 2 hours.
  • 6. Serve hot and enjoy!

Notes:

Feel free to add other vegetables like carrots or peas.
