Ingredients:  

Main Ingredients

  • 1 kg Pumpkin peeled and cubed
  • 2 cups Vegetable Broth
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Paprika
  • 2 tbsp Olive Oil
  • 1 cup Coconut Milk

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute.
  • Add the cubed pumpkin, vegetable broth, salt, pepper, and paprika. Bring to a boil.
  • Reduce heat and let it simmer for about 30 minutes, or until the pumpkin is tender.
  • Stir in the coconut milk and cook for another 5 minutes.
  • Serve hot and enjoy!

Notes:

This stew is perfect for a cozy night in. Feel free to add more spices to suit your taste.
