Ingredients:  

Stew Ingredients

  • 1 lb Chicken thighs, boneless and skinless cut into chunks
  • 1 cup Carrots sliced
  • 1 cup Celery sliced
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Chicken broth
  • 1 tsp Thyme dried
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Dumpling Ingredients

  • 1 cup Flour all-purpose
  • 1 tsp Baking powder
  • 0.5 tsp Salt
  • 0.5 cup Milk
  • 2 tbsp Butter melted

Instructions: 

  • 1. In a large pot, heat some oil over medium heat. Add chicken and cook until browned.
  • 2. Add carrots, celery, onion, and garlic. Cook until vegetables are tender.
  • 3. Pour in chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • 4. In a mixing bowl, combine flour, baking powder, and salt. Stir in milk and melted butter until just combined.
  • 5. Drop spoonfuls of dumpling batter onto the simmering stew. Cover and cook for 15 minutes, or until dumplings are cooked through.

Notes:

For a richer flavor, you can use chicken thighs with bones and skin, but remove them before serving.
