Ingredients:  

Stew Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots carrots, sliced
  • 2 stalks celery, sliced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Dumpling Ingredients

  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 2 tbsp butter, melted

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
  • Add carrots and celery, cook for another 5 minutes.
  • Pour in chicken broth and bring to a boil. Add shredded chicken, thyme, salt, and pepper. Reduce heat and let simmer.
  • In a mixing bowl, combine flour, baking powder, and salt for dumplings. Stir in milk and melted butter until just combined.
  • Drop spoonfuls of dumpling batter into the simmering stew. Cover and cook for 15 minutes, or until dumplings are cooked through.

Notes:

Feel free to add your favorite vegetables to the stew.
