Ingredients:  

Main Ingredients

  • 2 tbsp Olive Oil
  • 1 large Onion, diced
  • 3 cloves Garlic, minced
  • 2 cups Carrots, sliced
  • 2 cups Potatoes, diced
  • 1 cup Frozen Peas
  • 1 cup Green Beans, chopped
  • 4 cups Vegetable Broth
  • 2 tbsp Tomato Paste
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 cup Vegan Beef Chunks optional

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add diced onions and cook until translucent, about 5 minutes.
  • 3. Stir in minced garlic and cook for another minute.
  • 4. Add carrots, potatoes, and green beans. Cook for 5 minutes, stirring occasionally.
  • 5. Pour in vegetable broth and add tomato paste, thyme, rosemary, salt, and pepper. Stir well.
  • 6. Bring to a boil, then reduce heat and let it simmer for 30 minutes, or until vegetables are tender.
  • 7. If using, add vegan beef chunks and frozen peas. Cook for an additional 5 minutes.
  • 8. Adjust seasoning if needed and serve hot.
