Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add diced onions and cook until translucent, about 5 minutes.
3. Stir in minced garlic and cook for another minute.
4. Add carrots, potatoes, and green beans. Cook for 5 minutes, stirring occasionally.
5. Pour in vegetable broth and add tomato paste, thyme, rosemary, salt, and pepper. Stir well.
6. Bring to a boil, then reduce heat and let it simmer for 30 minutes, or until vegetables are tender.
7. If using, add vegan beef chunks and frozen peas. Cook for an additional 5 minutes.
8. Adjust seasoning if needed and serve hot.
