Egusi (ground melon seeds)

Palm oil

Stock (chicken or beef)

Assorted meats (beef, goat, etc.)
cut into bite-sized pieces

Spinach (chopped)

Crayfish (ground)

Habanero peppers (optional)

Salt
Instructions:
1. Heat the palm oil in a large pot over medium heat. Add the chopped onions and sauté until translucent.
2. Add the ground egusi and stir continuously for about 10 minutes.
3. Pour in the stock and bring to a boil. Add the assorted meats and cook until tender.
4. Stir in the chopped spinach, ground crayfish, and habanero peppers. Season with salt to taste.
5. Reduce heat and simmer for another 10 minutes. Serve hot.
Notes:
Egusi stew is best served with pounded yam, fufu, or rice.
