Ingredients:  

Main Ingredients

  • 2 cups Egusi (ground melon seeds)
  • 1 cup Palm oil
  • 1 large Onion (chopped)
  • 3 cups Stock (chicken or beef)
  • 1 lb Assorted meats (beef, goat, etc.) cut into bite-sized pieces
  • 2 cups Spinach (chopped)
  • 2 tbsp Crayfish (ground)
  • 2 pieces Habanero peppers (optional) chopped
  • to taste Salt

Instructions: 

  • 1. Heat the palm oil in a large pot over medium heat. Add the chopped onions and sauté until translucent.
  • 2. Add the ground egusi and stir continuously for about 10 minutes.
  • 3. Pour in the stock and bring to a boil. Add the assorted meats and cook until tender.
  • 4. Stir in the chopped spinach, ground crayfish, and habanero peppers. Season with salt to taste.
  • 5. Reduce heat and simmer for another 10 minutes. Serve hot.

Notes:

Egusi stew is best served with pounded yam, fufu, or rice.
