Instructions:
1. Blend the tomatoes, red bell peppers, and half of the onion until smooth.
2. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
3. Add the beef chunks to the pot and brown on all sides.
4. Pour in the blended tomato mixture, thyme, curry powder, bouillon cubes, salt, and pepper. Stir well.
5. Reduce the heat to low, cover the pot, and let it simmer for about 45 minutes to an hour, or until the beef is tender and the stew has thickened.
6. Adjust seasoning if necessary and serve hot with rice or your preferred side.
Notes:
This stew is even better the next day, so feel free to make it ahead of time.
