Ingredients:  

Main Ingredients

  • 2 lbs Beef (cut into chunks)
  • 4 units Tomatoes blended
  • 2 units Red bell peppers blended
  • 1 unit Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Thyme
  • 1 tsp Curry powder
  • 2 cubes Bouillon
  • to taste Salt
  • to taste Pepper
  • 1/4 cup Vegetable oil

Instructions: 

  • 1. Blend the tomatoes, red bell peppers, and half of the onion until smooth.
  • 2. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
  • 3. Add the beef chunks to the pot and brown on all sides.
  • 4. Pour in the blended tomato mixture, thyme, curry powder, bouillon cubes, salt, and pepper. Stir well.
  • 5. Reduce the heat to low, cover the pot, and let it simmer for about 45 minutes to an hour, or until the beef is tender and the stew has thickened.
  • 6. Adjust seasoning if necessary and serve hot with rice or your preferred side.

Notes:

This stew is even better the next day, so feel free to make it ahead of time.
