Ingredients:  

Main Ingredients

  • 1 lb Chicken thighs boneless, skinless
  • 2 tbsp Olive oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 Bell pepper chopped
  • 1 can Diced tomatoes 14.5 oz
  • 2 cups Chicken broth
  • 1 tsp Thyme dried
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 Carrots sliced
  • 2 Potatoes diced

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chicken thighs and cook until browned on all sides. Remove and set aside.
  • In the same pot, add the onion, garlic, and bell pepper. Cook until softened.
  • Add the diced tomatoes, chicken broth, thyme, paprika, salt, and black pepper. Stir well.
  • Return the chicken to the pot. Add the carrots and potatoes. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 30 minutes or until the vegetables are tender.
  • Serve hot and enjoy!

This stew is even better the next day!
