Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chicken thighs and cook until browned on all sides. Remove and set aside.
In the same pot, add the onion, garlic, and bell pepper. Cook until softened.
Add the diced tomatoes, chicken broth, thyme, paprika, salt, and black pepper. Stir well.
Return the chicken to the pot. Add the carrots and potatoes. Bring to a boil.
Reduce heat to low, cover, and simmer for 30 minutes or until the vegetables are tender.
Serve hot and enjoy!
