Ingredients:  

Main Ingredients

  • 2 lbs Beef Stew Meat cut into chunks
  • 2 tbsp Olive Oil
  • 1 Onion chopped
  • 2 Garlic Cloves minced
  • 1 Green Bell Pepper chopped
  • 2 cups Beef Broth
  • 1 can Tomato Sauce (8 oz)
  • 2 Potatoes peeled and cubed
  • 2 Carrots sliced
  • 1 tsp Oregano
  • 1 tsp Cumin
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
  • 2. Add chopped onion, minced garlic, and chopped bell pepper. Cook until vegetables are tender.
  • 3. Pour in beef broth and tomato sauce. Stir in oregano, cumin, salt, and black pepper.
  • 4. Add potatoes and carrots. Bring to a boil, then reduce heat to low. Cover and simmer for 1 hour or until meat and vegetables are tender.
  • 5. Adjust seasoning if needed. Serve hot.

Notes:

This stew is perfect for a cozy family dinner. Serve with white rice or crusty bread.
