Instructions:
1. Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
2. Add chopped onion, minced garlic, and chopped bell pepper. Cook until vegetables are tender.
3. Pour in beef broth and tomato sauce. Stir in oregano, cumin, salt, and black pepper.
4. Add potatoes and carrots. Bring to a boil, then reduce heat to low. Cover and simmer for 1 hour or until meat and vegetables are tender.
5. Adjust seasoning if needed. Serve hot.
Notes:
This stew is perfect for a cozy family dinner. Serve with white rice or crusty bread.
