Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups spinach, chopped
  • 1 cup coconut milk
  • 1 cup vegetable broth
  • 1 tsp thyme
  • 1 tsp allspice
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and garlic, and sauté until fragrant.
  • Add the bell pepper and cook for another 5 minutes.
  • Stir in the chopped spinach and cook until wilted.
  • Pour in the coconut milk and vegetable broth, then add the thyme, allspice, salt, and black pepper.
  • Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Serve hot and enjoy!

Notes:

This stew is perfect for a cozy dinner. Feel free to add more vegetables or protein of your choice.
