Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and garlic, and sauté until fragrant.
Add the bell pepper and cook for another 5 minutes.
Stir in the chopped spinach and cook until wilted.
Pour in the coconut milk and vegetable broth, then add the thyme, allspice, salt, and black pepper.
Bring to a boil, then reduce heat and simmer for 30 minutes.
Serve hot and enjoy!
