Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tsp ground cinnamon
  • 1 tsp paprika
  • 1 can diced tomatoes
  • 1 can chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 1 salt and pepper to taste
  • 1 handful fresh cilantro, chopped

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until soft, about 5 minutes.
  • Add the minced garlic and cook for another minute.
  • Stir in the ground cumin, coriander, turmeric, cinnamon, and paprika. Cook for 1-2 minutes until fragrant.
  • Add the diced tomatoes, chickpeas, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Season with salt and pepper to taste.
  • Garnish with fresh cilantro before serving.

Notes:

This stew is even better the next day. Serve with crusty bread or over couscous.
