chickpeas, drained and rinsed

fresh cilantro, chopped
Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until soft, about 5 minutes.
Add the minced garlic and cook for another minute.
Stir in the ground cumin, coriander, turmeric, cinnamon, and paprika. Cook for 1-2 minutes until fragrant.
Add the diced tomatoes, chickpeas, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
Season with salt and pepper to taste.
Garnish with fresh cilantro before serving.
Notes:
This stew is even better the next day. Serve with crusty bread or over couscous.
