Ingredients:  

Main Ingredients

  • 1 lb Salmon fillet cut into chunks
  • 2 cups Fish stock
  • 1 cup Diced tomatoes canned
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 cup Carrots sliced
  • 1 cup Potatoes diced

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, and sauté until softened.
  • Add the diced tomatoes, fish stock, carrots, and potatoes. Bring to a boil.
  • Reduce heat and simmer for about 20 minutes, until the vegetables are tender.
  • Add the salmon chunks, salt, and black pepper. Simmer for another 10 minutes, until the salmon is cooked through.
  • Serve hot and enjoy!

Notes:

Feel free to add other vegetables like bell peppers or peas.
