Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and minced garlic, and sauté until softened.
Add the diced tomatoes, fish stock, carrots, and potatoes. Bring to a boil.
Reduce heat and simmer for about 20 minutes, until the vegetables are tender.
Add the salmon chunks, salt, and black pepper. Simmer for another 10 minutes, until the salmon is cooked through.
Serve hot and enjoy!
Notes:
Feel free to add other vegetables like bell peppers or peas.
