Instructions:
Heat the oil in a large pot over medium heat. Add the beef and cook until browned on all sides.
Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
Add the sliced carrots and diced potatoes. Stir to combine.
Stir in the tomato paste and cook for a few minutes.
Pour in the beef broth, add salt, pepper, and paprika. Bring to a boil, then reduce heat and simmer for about 1.5 hours or until the beef is tender.
Adjust seasoning if necessary and serve hot.
Notes:
For a richer flavor, you can add a splash of red wine while cooking.
