Ingredients:  

Main Ingredients

  • 2 lbs Pork shoulder, cubed
  • 1 large Onion, chopped
  • 4 cloves Garlic, minced
  • 2 cups Chicken broth
  • 1 cup Roasted green chilies, chopped
  • 1 tsp Ground cumin
  • 1 tsp Oregano
  • to taste Salt and pepper

Instructions: 

  • 1. Heat a large pot over medium-high heat. Add the cubed pork and cook until browned on all sides.
  • 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Pour in the chicken broth and add the chopped green chilies, ground cumin, and oregano. Stir to combine.
  • 4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the pork is tender.
  • 5. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is great served with warm tortillas or over rice.
