Ingredients:

Vegetable oil
Instructions:
1. Season fish fillets with salt and black pepper.
2. Heat oil in a large skillet over medium heat. Add fish and cook until browned on both sides. Remove and set aside.
3. In the same skillet, add onion, bell pepper, and garlic. Cook until vegetables are tender.
4. Stir in thyme, tomato paste, water, and soy sauce. Bring to a simmer.
5. Return fish to the skillet. Spoon sauce over fish and simmer for 10-15 minutes, until fish is cooked through.
Notes:
Serve with rice or your favorite side dish.
