Instructions:
Heat olive oil in a large pot over medium heat.
Add chicken pieces and brown on all sides.
Add chopped onion, garlic, and bell pepper. Cook until softened.
Pour in chicken broth and tomato sauce. Stir in cumin, paprika, salt, and black pepper.
Add potatoes and carrots. Bring to a boil, then reduce heat and simmer for 30-40 minutes, until chicken is cooked through and vegetables are tender.
Serve hot and enjoy!
Notes:
This stew is even better the next day. Store leftovers in the fridge and reheat gently.
