Ingredients:  

Main Ingredients

  • 1 whole Chicken cut into pieces
  • 2 tbsp Olive Oil
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 large Bell Pepper chopped
  • 2 cups Chicken Broth
  • 1 can Tomato Sauce
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 2 cups Potatoes peeled and cubed
  • 1 cup Carrots sliced

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chicken pieces and brown on all sides.
  • Add chopped onion, garlic, and bell pepper. Cook until softened.
  • Pour in chicken broth and tomato sauce. Stir in cumin, paprika, salt, and black pepper.
  • Add potatoes and carrots. Bring to a boil, then reduce heat and simmer for 30-40 minutes, until chicken is cooked through and vegetables are tender.
  • Serve hot and enjoy!

Notes:

This stew is even better the next day. Store leftovers in the fridge and reheat gently.
