Ingredients:  

Main Ingredients

  • 4 cups Potatoes, diced
  • 1 cup Carrots, sliced
  • 1 cup Celery, chopped
  • 1 cup Onion, chopped
  • 4 cups Vegetable broth
  • 2 cloves Garlic, minced
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tsp Thyme

Instructions: 

  • 1. Heat a large pot over medium heat. Add a bit of oil.
  • 2. Add the onions, carrots, and celery. Cook until softened, about 5 minutes.
  • 3. Add the garlic and cook for another minute.
  • 4. Add the potatoes, vegetable broth, salt, pepper, and thyme. Bring to a boil.
  • 5. Reduce heat and let it simmer for about 30-35 minutes, or until the potatoes are tender.
  • 6. Adjust seasoning if needed. Serve hot.

Notes:

You can add other vegetables like peas or corn for extra flavor.
