Instructions:
1. Heat a large pot over medium heat. Add a bit of oil.
2. Add the onions, carrots, and celery. Cook until softened, about 5 minutes.
3. Add the garlic and cook for another minute.
4. Add the potatoes, vegetable broth, salt, pepper, and thyme. Bring to a boil.
5. Reduce heat and let it simmer for about 30-35 minutes, or until the potatoes are tender.
6. Adjust seasoning if needed. Serve hot.
Notes:
You can add other vegetables like peas or corn for extra flavor.
