Ingredients:  

Main Ingredients

  • 1 kg Beef Chuck cut into chunks
  • 2 tbsp Vegetable Oil
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 2 Carrots cut into chunks
  • 2 Potatoes cut into chunks
  • 1 tbsp Tomato Paste
  • 4 cups Beef Broth
  • 2 tbsp Fish Sauce
  • 1 tsp Sugar
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 stalks Lemongrass bruised
  • 2 Star Anise

Instructions: 

  • Heat the vegetable oil in a large pot over medium heat.
  • Add the beef chunks and brown them on all sides.
  • Add the chopped onion and minced garlic, cook until fragrant.
  • Stir in the tomato paste, then add the beef broth.
  • Add the carrots, potatoes, lemongrass, star anise, fish sauce, sugar, salt, and black pepper.
  • Bring to a boil, then reduce heat and simmer for about 2 hours, or until the beef is tender.
  • Remove the lemongrass and star anise before serving.

Notes:

Serve with crusty bread or steamed rice.
