beef stew meat
cut into bite-sized pieces

tbsp
olive oil

onion
chopped
2
carrots
sliced
2
celery stalks
sliced

cloves
garlic
minced

cups
beef broth
1
cup
pearl barley
1
tsp
dried thyme
1
tsp
dried rosemary
to taste
salt and pepper
Instructions:
1. Heat the olive oil in a large pot over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef and set aside.
2. In the same pot, add the onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
3. Add the garlic and cook for another minute.
4. Return the beef to the pot. Add the beef broth, barley, thyme, and rosemary. Bring to a boil.
5. Reduce the heat to low, cover, and simmer for about 1.5 to 2 hours, or until the beef and barley are tender.
6. Season with salt and pepper to taste. Serve hot.
Notes:
This stew is even better the next day. Store leftovers in the fridge and reheat gently.
