Ingredients:  

Main Ingredients

  • 1 lb beef stew meat cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 6 cups beef broth
  • 1 cup pearl barley
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste salt and pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef and set aside.
  • 2. In the same pot, add the onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  • 3. Add the garlic and cook for another minute.
  • 4. Return the beef to the pot. Add the beef broth, barley, thyme, and rosemary. Bring to a boil.
  • 5. Reduce the heat to low, cover, and simmer for about 1.5 to 2 hours, or until the beef and barley are tender.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is even better the next day. Store leftovers in the fridge and reheat gently.
