Ingredients:  

Main Ingredients

  • 2 cups red kidney beans soaked overnight
  • 1 can coconut milk
  • 1 lb pork or beef optional, cut into chunks
  • 2 cloves garlic minced
  • 1 whole scotch bonnet pepper optional
  • 1 tsp thyme dried
  • 2 stalks scallions chopped
  • 1 tsp salt
  • 1 tsp black pepper

Dumplings

  • 1 cup flour
  • 1/4 cup water
  • 1/2 tsp salt

Instructions: 

  • 1. In a large pot, add the soaked red kidney beans and enough water to cover them. Bring to a boil, then reduce heat and simmer until beans are tender, about 1 hour.
  • 2. Add the coconut milk, meat (if using), garlic, scotch bonnet pepper, thyme, scallions, salt, and black pepper. Stir well and let it cook for another 30 minutes.
  • 3. While the stew is cooking, prepare the dumplings. In a bowl, mix the flour, water, and salt to form a dough. Roll the dough into small balls or elongated shapes.
  • 4. Add the dumplings to the pot and cook for another 15 minutes, or until the dumplings are cooked through.
  • 5. Remove the scotch bonnet pepper before serving. Serve hot and enjoy!

Notes:

For a vegetarian version, simply omit the meat.
