Ingredients:  

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 2 cups Vegetable Broth
  • 1 cup Diced Tomatoes canned
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste

Instructions: 

  • 1. Heat a large pot over medium heat and add a splash of oil.
  • 2. Add the chopped onion and minced garlic, sauté until soft.
  • 3. Stir in the cumin and paprika, cook for another minute.
  • 4. Add the lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  • 5. Reduce heat to low, cover, and simmer for 30-35 minutes until lentils are tender.
  • 6. Season with salt and pepper to taste. Serve hot.

Feel free to add your favorite vegetables to the stew for extra flavor and nutrition.
