Instructions:
Heat olive oil in a large pot over medium heat. Add beef stew meat and cook until browned.
Add onions and garlic, cook until softened.
Add potatoes, carrots, beef broth, salt, and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for 2 hours or until meat and vegetables are tender.
Serve hot and enjoy!
