Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into cubes
  • 2 cups Potatoes diced
  • 2 cups Carrots sliced
  • 1 cup Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Beef Broth
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 tbsp Olive Oil

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add beef stew meat and cook until browned.
  • Add onions and garlic, cook until softened.
  • Add potatoes, carrots, beef broth, salt, and pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 2 hours or until meat and vegetables are tender.
  • Serve hot and enjoy!

Notes:

This stew is great for using up any leftover vegetables you have on hand.
