Ingredients:  

Main Ingredients

  • 2 lbs venison, cubed
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp flour (optional, for thickening)

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add venison and brown on all sides. Remove and set aside.
  • 3. In the same pot, sauté onions, carrots, and garlic until softened.
  • 4. Return venison to the pot. Add potatoes, beef broth, thyme, rosemary, salt, and pepper.
  • 5. Bring to a boil, then reduce heat and simmer for 2 hours.
  • 6. If desired, mix flour with a bit of water to make a slurry and stir into the stew to thicken.
  • 7. Serve hot and enjoy!

Notes:

This stew is even better the next day!
