large onion, chopped

carrots, sliced

potatoes, cubed

cloves
garlic, minced

beef broth

dried thyme

dried rosemary

flour
(optional, for thickening)
Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add venison and brown on all sides. Remove and set aside.
3. In the same pot, sauté onions, carrots, and garlic until softened.
4. Return venison to the pot. Add potatoes, beef broth, thyme, rosemary, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for 2 hours.
6. If desired, mix flour with a bit of water to make a slurry and stir into the stew to thicken.
7. Serve hot and enjoy!
