Ingredients:  

Main Ingredients

  • 1 whole rabbit, cut into pieces
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 large carrots, sliced
  • 2 stalks celery, chopped
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste salt and pepper

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat. Add rabbit pieces and brown on all sides. Remove and set aside.
  • 2. In the same pot, add chopped onion and garlic. Sauté until softened.
  • 3. Stir in tomato paste, thyme, and rosemary. Cook for another minute.
  • 4. Return rabbit to the pot. Add chicken broth, carrots, and celery. Bring to a boil, then reduce heat and simmer for 2 hours.
  • 5. Season with salt and pepper to taste. Serve hot.

Notes:

For a richer flavor, marinate the rabbit in red wine overnight.
