Ingredients:  

Main Ingredients

  • 1 lb Ground Beef browned
  • 1 can Pinto Beans drained and rinsed
  • 1 can Diced Tomatoes
  • 1 cup Corn frozen or canned
  • 1 cup Beef Broth
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions: 

  • 1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  • 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Stir in the pinto beans, diced tomatoes, corn, and beef broth.
  • 4. Add the chili powder, cumin, salt, and black pepper. Stir well to combine.
  • 5. Bring the stew to a boil, then reduce the heat and let it simmer for about 30 minutes.
  • 6. Serve hot and enjoy!

Notes:

This stew is great with a side of cornbread.
