Ingredients:  

Main Ingredients

  • 2 tbsp Olive Oil
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 3 medium Carrots sliced
  • 2 stalks Celery sliced
  • 2 cups Potatoes diced
  • 1 cup Green Beans trimmed and cut into 1-inch pieces
  • 4 cups Vegetable Broth
  • 1 can Diced Tomatoes 14.5 oz can
  • 1 tsp Dried Thyme
  • 1 tsp Dried Basil
  • 1 tsp Salt to taste
  • 0.5 tsp Black Pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic. Sauté until softened.
  • Add carrots, celery, and potatoes. Cook for about 5 minutes.
  • Stir in green beans, vegetable broth, diced tomatoes, thyme, and basil.
  • Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Season with salt and pepper to taste. Serve hot.
