Instructions:
1. Season the chicken with salt, pepper, and allspice.
2. Heat the vegetable oil in a large pot over medium heat. Brown the chicken pieces on all sides.
3. Remove the chicken and set aside. In the same pot, sauté the onion, garlic, and ginger until fragrant.
4. Add the bell pepper and tomato, cooking until softened.
5. Stir in the soy sauce, brown sugar, thyme, and chicken broth. Bring to a simmer.
6. Return the chicken to the pot. Cover and cook on low heat for about 45 minutes, or until the chicken is tender.
7. Serve hot with rice or your favorite side.
Notes:
For extra flavor, marinate the chicken for a few hours before cooking.
