Ingredients:  

Main Ingredients

  • 2 lbs Chicken (cut into pieces)
  • 1 large Onion (chopped)
  • 2 cloves Garlic (minced)
  • 1 tbsp Ginger (grated)
  • 2 tbsp Soy Sauce
  • 2 tbsp Brown Sugar
  • 1 tsp Thyme
  • 1 tsp Allspice
  • 1 cup Chicken Broth
  • 2 tbsp Vegetable Oil
  • 1 medium Bell Pepper (chopped)
  • 1 medium Tomato (chopped)
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions: 

  • 1. Season the chicken with salt, pepper, and allspice.
  • 2. Heat the vegetable oil in a large pot over medium heat. Brown the chicken pieces on all sides.
  • 3. Remove the chicken and set aside. In the same pot, sauté the onion, garlic, and ginger until fragrant.
  • 4. Add the bell pepper and tomato, cooking until softened.
  • 5. Stir in the soy sauce, brown sugar, thyme, and chicken broth. Bring to a simmer.
  • 6. Return the chicken to the pot. Cover and cook on low heat for about 45 minutes, or until the chicken is tender.
  • 7. Serve hot with rice or your favorite side.

Notes:

For extra flavor, marinate the chicken for a few hours before cooking.
