Ingredients:  

Main Ingredients

  • 1 lb pork shoulder, cubed
  • 2 dozen littleneck clams, scrubbed
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can diced tomatoes 14.5 oz
  • 1 cup white wine
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add pork and cook until browned.
  • Add onion, garlic, and red bell pepper. Cook until softened.
  • Stir in diced tomatoes, white wine, chicken broth, and paprika. Bring to a simmer.
  • Add littleneck clams, cover, and cook until clams open, about 10 minutes.
  • Season with salt and pepper. Garnish with fresh parsley before serving.
