Ingredients:  

Main Ingredients

  • 2 lbs oxtail
  • 1 tbsp vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp brown sugar
  • 2 cups beef broth
  • 1 tsp thyme
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 carrots carrots, chopped
  • 2 potatoes potatoes, chopped

Instructions: 

  • 1. Heat the oil in a large pot over medium heat.
  • 2. Add the brown sugar and let it caramelize.
  • 3. Add the oxtail pieces and brown on all sides.
  • 4. Add the chopped onion and garlic, cook until soft.
  • 5. Pour in the beef broth, thyme, salt, and pepper. Bring to a boil.
  • 6. Reduce heat to low, cover, and simmer for 2.5 to 3 hours.
  • 7. Add the carrots and potatoes, cook for another 30 minutes.
  • 8. Serve hot with rice or bread.

Notes:

This stew is even better the next day, so consider making it ahead of time.
