Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 medium zucchini, sliced
  • 4 large tomatoes, chopped
  • 1 tsp turmeric
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 cups water

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté until golden.
  • Add the minced garlic and cook for another minute.
  • Add the sliced zucchini and chopped tomatoes. Stir well.
  • Season with turmeric, salt, and black pepper. Mix well.
  • Pour in the water and bring to a boil. Reduce heat to low, cover, and simmer for 30-35 minutes until the zucchini is tender.
  • Serve hot with rice or bread.

Notes:

This stew is even better the next day. Store leftovers in the fridge.
