Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and sauté until golden.
Add the minced garlic and cook for another minute.
Add the sliced zucchini and chopped tomatoes. Stir well.
Season with turmeric, salt, and black pepper. Mix well.
Pour in the water and bring to a boil. Reduce heat to low, cover, and simmer for 30-35 minutes until the zucchini is tender.
Serve hot with rice or bread.
Notes:
This stew is even better the next day. Store leftovers in the fridge.
