Ingredients:  

Main Ingredients

  • 2 lbs Chicken cut into pieces
  • 1 tbsp Brown Sugar
  • 2 tbsp Soy Sauce
  • 1 tbsp Vegetable Oil
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Thyme dried
  • 1 cup Carrots sliced
  • 1 cup Bell Peppers sliced
  • 2 cups Chicken Broth
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste

Instructions: 

  • 1. Season chicken with salt, pepper, and soy sauce. Set aside.
  • 2. Heat oil in a large pot over medium heat. Add brown sugar and let it caramelize.
  • 3. Add chicken pieces to the pot and brown on all sides.
  • 4. Add onions, garlic, and thyme. Cook until onions are translucent.
  • 5. Add carrots, bell peppers, and chicken broth. Bring to a boil.
  • 6. Reduce heat to low, cover, and simmer for 45 minutes or until chicken is cooked through.
  • 7. Adjust seasoning with salt and pepper to taste. Serve hot.

Notes:

This dish pairs well with rice or fried plantains.
