Instructions:
1. Season chicken with salt, pepper, and soy sauce. Set aside.
2. Heat oil in a large pot over medium heat. Add brown sugar and let it caramelize.
3. Add chicken pieces to the pot and brown on all sides.
4. Add onions, garlic, and thyme. Cook until onions are translucent.
5. Add carrots, bell peppers, and chicken broth. Bring to a boil.
6. Reduce heat to low, cover, and simmer for 45 minutes or until chicken is cooked through.
7. Adjust seasoning with salt and pepper to taste. Serve hot.
Notes:
This dish pairs well with rice or fried plantains.
