Ingredients:  

Chicken Stew

  • 1 lb chicken breast, cubed
  • 2 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 cup onion, chopped
  • 2 tbsp flour
  • 1 tsp salt
  • 1 tsp black pepper

Bisquick Dumplings

  • 2 cups Bisquick mix
  • 2/3 cup milk

Instructions: 

  • 1. In a large pot, cook chicken over medium heat until browned.
  • 2. Add carrots, celery, and onion. Cook until vegetables are tender.
  • 3. Stir in flour, salt, and pepper until well blended.
  • 4. Gradually stir in chicken broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  • 5. In a mixing bowl, combine Bisquick mix and milk until a soft dough forms.
  • 6. Drop spoonfuls of dough onto simmering stew. Cook uncovered for 10 minutes.
  • 7. Cover and cook for an additional 10 minutes. Serve hot.

Notes:

Feel free to add other vegetables like peas or potatoes.
