Ingredients:  

Main Ingredients

  • 1 cup couscous
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 1 zucchini, chopped
  • 1 can chickpeas, drained and rinsed
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • to taste salt and pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and cook until translucent, about 5 minutes.
  • 3. Stir in the minced garlic and cook for another minute.
  • 4. Add the sliced carrots and chopped zucchini. Cook for about 5 minutes.
  • 5. Add the chickpeas, diced tomatoes, and vegetable broth. Bring to a boil.
  • 6. Stir in the ground cumin, ground coriander, and paprika. Season with salt and pepper to taste.
  • 7. Reduce heat and let simmer for 20 minutes.
  • 8. Add the couscous, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.

Notes:

This stew is great for meal prep and can be stored in the fridge for up to 5 days.
