Instructions:
Heat the oil in a large pot over medium heat.
Add the chopped onion and cook until translucent.
Add the minced garlic and grated ginger, cook for another 2 minutes.
Add the goat meat and brown on all sides.
Add the chopped tomatoes and cook for 5 minutes.
Pour in the water, season with salt and pepper, and bring to a boil.
Reduce heat to low, cover, and simmer for 1.5 hours or until the meat is tender.
Adjust seasoning if necessary and serve hot.
Notes:
Serve with rice or boiled yams for a complete meal.
