Ingredients:  

Main Ingredients

  • 2 lbs goat meat cut into chunks
  • 2 tbsp vegetable oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 cups tomatoes chopped
  • 1 cup water
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste

Instructions: 

  • Heat the oil in a large pot over medium heat.
  • Add the chopped onion and cook until translucent.
  • Add the minced garlic and grated ginger, cook for another 2 minutes.
  • Add the goat meat and brown on all sides.
  • Add the chopped tomatoes and cook for 5 minutes.
  • Pour in the water, season with salt and pepper, and bring to a boil.
  • Reduce heat to low, cover, and simmer for 1.5 hours or until the meat is tender.
  • Adjust seasoning if necessary and serve hot.

Notes:

Serve with rice or boiled yams for a complete meal.
