Ingredients:  

Main Ingredients

  • 1 lb Pork shoulder cut into cubes
  • 1 medium Butternut squash peeled and cubed
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Chicken broth
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Paprika
  • 2 tbsp Olive oil

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the pork cubes and brown on all sides.
  • Add the chopped onion and minced garlic, cook until softened.
  • Stir in the butternut squash, chicken broth, salt, pepper, and paprika.
  • Bring to a boil, then reduce heat and simmer for 45 minutes to 1 hour, until pork and squash are tender.
  • Serve hot and enjoy!

Notes:

Feel free to add other vegetables like carrots or potatoes.
