Ingredients:  

Main Ingredients

  • 1 lb Chicken Thighs boneless, skinless
  • 1 tbsp Olive Oil
  • 1 medium Onion chopped
  • 3 cloves Garlic minced
  • 1 tbsp Ginger grated
  • 2 cups Chicken Broth
  • 2 medium Carrots sliced
  • 2 medium Potatoes diced
  • 1 tsp Salt to taste
  • 0.5 tsp Black Pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent.
  • Add minced garlic and grated ginger, cook for another minute.
  • Add chicken thighs and cook until browned on all sides.
  • Pour in chicken broth, add carrots and potatoes.
  • Season with salt and black pepper.
  • Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Serve hot.

Notes:

Feel free to add more vegetables as you like.
