Salt and Pepper
Instructions:
1. Heat a large pot over medium-high heat. Add beef and cook until browned on all sides.
2. Add the onion and garlic, and cook until softened.
3. Stir in the beef broth, diced tomatoes, chipotle peppers, cumin, and oregano. Bring to a boil.
4. Reduce heat to low, cover, and simmer for 1 hour.
5. Add the potatoes and carrots. Continue to simmer for another 30-40 minutes, or until vegetables are tender.
6. Season with salt and pepper to taste. Serve hot.
Notes:
This stew is perfect for a cold day. Adjust the chipotle peppers to your spice preference.
