Ingredients:  

Main Ingredients

  • 2 lbs Beef Chuck cut into 1-inch cubes
  • 1 large Onion diced
  • 3 cloves Garlic minced
  • 2 cups Beef Broth
  • 1 can Diced Tomatoes 14.5 oz can
  • 2 tbsp Chipotle Peppers in Adobo Sauce chopped
  • 1 tsp Ground Cumin
  • 1 tsp Dried Oregano
  • 2 cups Potatoes peeled and diced
  • 2 cups Carrots peeled and sliced
  • to taste Salt and Pepper

Instructions: 

  • 1. Heat a large pot over medium-high heat. Add beef and cook until browned on all sides.
  • 2. Add the onion and garlic, and cook until softened.
  • 3. Stir in the beef broth, diced tomatoes, chipotle peppers, cumin, and oregano. Bring to a boil.
  • 4. Reduce heat to low, cover, and simmer for 1 hour.
  • 5. Add the potatoes and carrots. Continue to simmer for another 30-40 minutes, or until vegetables are tender.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is perfect for a cold day. Adjust the chipotle peppers to your spice preference.
