Ingredients:  

Main Ingredients

  • 1 lb Chicken Thighs cut into bite-sized pieces
  • 4 cups Chicken Broth
  • 1 Carrot sliced
  • 1 Daikon Radish sliced
  • 1 cup Shiitake Mushrooms sliced
  • 1 cup Tofu cubed
  • 2 tbsp Soy Sauce
  • 1 tbsp Mirin
  • 1 tsp Salt
  • 1 tsp Sugar
  • 2 stalks Green Onions chopped

Instructions: 

  • 1. In a large pot, bring the chicken broth to a boil.
  • 2. Add the chicken thighs and cook until no longer pink.
  • 3. Add the carrot, daikon radish, and shiitake mushrooms. Simmer for 10 minutes.
  • 4. Add the tofu, soy sauce, mirin, salt, and sugar. Simmer for another 10 minutes.
  • 5. Garnish with chopped green onions before serving.

Notes:

Feel free to add other vegetables like napa cabbage or enoki mushrooms.
