Ingredients:  

Main Ingredients

  • 1 whole chicken cut into pieces
  • 4 cups chicken broth
  • 1 lb tomatillos husked and chopped
  • 1 bunch cilantro chopped
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • 1. In a large pot, bring the chicken broth to a boil.
  • 2. Add the chicken pieces and cook until tender, about 30 minutes.
  • 3. In a blender, combine tomatillos, cilantro, onion, and garlic. Blend until smooth.
  • 4. Pour the blended mixture into the pot with the chicken. Add salt and pepper.
  • 5. Simmer for another 30 minutes, stirring occasionally.
  • 6. Serve hot with rice or tortillas.

Notes:

This stew is perfect for a cozy dinner. Adjust the seasoning to your taste.
