Ingredients:  

Main Ingredients

  • 2 lbs Beef chuck, cut into cubes
  • 4 Carrots, chopped
  • 4 Potatoes, chopped
  • 1 Onion, chopped
  • 3 cups Beef broth
  • 2 tbsp Tomato paste
  • 2 cloves Garlic, minced
  • 1 tsp Dried thyme
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions: 

  • 1. In a large pot, brown the beef over medium heat.
  • 2. Add the onions and garlic, cook until softened.
  • 3. Stir in the tomato paste, beef broth, thyme, salt, and pepper.
  • 4. Add the carrots and potatoes. Bring to a boil.
  • 5. Reduce heat, cover, and simmer for 2 hours or until beef is tender.

Notes:

Serve hot with crusty bread.
