Ingredients:  

Main Ingredients

  • 4 large potatoes peeled and cubed
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 large tomatoes chopped
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 4 cups vegetable broth

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onions and garlic, sauté until soft.
  • Add tomatoes, cook until they start to break down.
  • Add cubed potatoes, salt, pepper, paprika, and oregano. Stir well.
  • Pour in vegetable broth, bring to a boil.
  • Reduce heat, cover, and simmer for 45 minutes or until potatoes are tender.

Notes:

Serve hot with crusty bread.
