Ingredients:  

Main Ingredients

  • 2 tbsp vegetable oil
  • 1 lb beef stew meat cut into cubes
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tbsp ginger minced
  • 2 cups beef broth
  • 1 cup tomato sauce
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1 cup carrots sliced
  • 1 cup potatoes diced
  • 1 cup peas
  • to taste salt
  • to taste black pepper

Instructions: 

  • Heat the oil in a large pot over medium heat.
  • Add the beef and cook until browned on all sides.
  • Add the onion, garlic, and ginger. Cook until the onion is soft.
  • Pour in the beef broth and tomato sauce. Stir in the cumin, coriander, and paprika.
  • Add the carrots and potatoes. Bring to a boil, then reduce heat and simmer for 45 minutes.
  • Stir in the peas and cook for another 5 minutes. Season with salt and pepper to taste.

Notes:

Serve hot with rice or bread.
